VINEYARDS
Located in Ittiri, northwest Sardinia, on a gentle south-facing slope at altitudes ranging from 200 to 300 meters above sea level. The training system is Guyot, with a planting layout of 2.5m x 1m. Average yields per hectare are around 70 quintals. No chemical fertilizers are used, only composted organic matter. The soil is worked mechanically.

Grapes vinified using gentle pressing, with the must chilled and clarified through static settling. Fermentation at a controlled temperature using selected yeasts.
