The olives are washed and selected before undergoing a delicate two-phase continuous cycle pressing within a few hours of harvesting.

ORGANOLEPTIC CHARACTERISTICS
With an intense golden yellow color and green highlights, this oil offers elegant and complex fruity aromas, with distinct notes of exotic fruit, apple, and Mediterranean flowers. On the palate, it is smooth and fluid, with a well-balanced bitterness and spiciness that are present but never overpowering.
